Japanese Keto Salad Rei Shabu
Keto Japanese salad is otherwise known as Rei Shabu. While Keto cuisine is known for being healthy. Helping steady out brain abnormalities such as extreme ADHD, and aiding to balance emotions. though not famous for a Keto diet Japan does offer a good selection of Keto dishes that most people probably won’t have thought of.
Rei Shabu is one of them.
A favorite in the house during spring and especially summer. Easy to make and put together.
The only thing you cook is the thin pork sheets. Cutting up the tofu and vegetables only takes a few minutes to do.
This is a great dish we make during summer. Summer is dreadful in Japan. Being hot, humid, eating light and cool food is always on my mind for dinner.
Rei shabu can be made with different vegetables. We use classic ingredients. Tofu, green onions, lettuce, thing pork sheets, and avocado.
Using different types of lettuce and seasonal vegetables is always an option. To make the sauce, use a Soy sauce base adding sesame oil and sugar.
Our kids love to eat this. Clark loves the tofu. There are some days he will eat only the tofu. He’s a fun goofy kid who loves to eat healthily.

Equipment
- small pot
- Cutting Board
- Cooking Chopsticks
- colander
Ingredients
- 100 grams Pork sheets
- 1 tbsp Soy Sauce
- 1 tbsp Vinegar
- 1 tbsp Sugar
- 1 handful Green Onions
- 1 head Lettuce
Instructions
- Boil pork sheets
- Place large bit sized lettuce on a plate
- Cut tofu into 4-8 small cubes
- Cool down the boiled pork sheets with cold water until they are cold.
- Place the pork sheets on the lettuce and tofu
